The best gas station coffee I have ever had is at a Shell station off exit 78 on I-95 in Connecticut. I know how ridiculous this sounds. Bear with me.

The setup: they have a Bunn drip machine that they clean, apparently, more than once a day. They use a medium-dark roast bean from a regional Rhode Island roaster (the label is on the bag if you look). They rotate the pot every 30 minutes so it is never sitting more than half an hour. The cashier is a middle-aged woman named Denise who told me all of this when I asked why the coffee was so much better than the Wawa 10 miles south.

The lesson is not that gas station coffee is secretly good. It is not, mostly. The lesson is that any coffee served at the right temperature, from clean equipment, brewed with beans that were roasted this month, tastes better than fancy coffee that has been sitting under a warmer since 5am. You can be a Blue Bottle in San Francisco and serve worse coffee than a Shell station if you get the fundamentals wrong. Denise gets the fundamentals right. I stop every time I drive that stretch.

Panama Gesha is a specific coffee varietal grown at high elevation in Central America, and the finest lots sell for prices that sound insane. I paid $95 for 100 grams from a small Bay Area roaster once, roughly two dollars per cup, and I am going to defend that purchase.

The reason it is worth it once a year: Gesha does not taste like other coffee. It tastes like jasmine tea, or bergamot, or one of the more perfumey black teas you might have had at a hotel breakfast. There is caffeine in there and it is technically coffee, but if you drank it blind you might not identify it as coffee at all. The comparison is not to good coffee vs bad coffee. The comparison is to a completely different beverage that happens to share ingredients.

You brew it lighter and slower than other coffee. You do not add milk. You drink it in a small cup and pay attention. It is genuinely a special-occasion drink and I treat it that way — birthday, big project shipping, first day of spring. If you want to know why some people care about coffee the way others care about wine, spend $95 on one bag of a top Gesha and drink it slowly for a week. You will not need convincing after that.

Iced coffee is hot brewed coffee, poured over ice, served cold. It is bright, acidic, and it tastes like the beans it was made from. Cold brew is coffee brewed with cold water over 12+ hours, without heat ever touching it. It is smoother, less acidic, and it tastes muted — the notes that heat draws out of the bean stay dormant in cold water. These are two very different drinks.

Almost every American coffee shop calls both drinks “iced coffee” on the menu. This is a marketing decision that is understandable and a cop-out. If you are drinking “iced coffee” and it tastes flat, smooth, less like coffee than you expected, you are drinking cold brew. If it tastes bright and acidic and a little sharp, you are drinking real iced coffee.

Which one you prefer says a lot about you. People who want their coffee to taste like coffee prefer real iced. People who want a cold caffeine drink that is easy to swallow prefer cold brew. Neither is wrong, but the two have gotten confused in a way that lets bad cold brew hide behind good coffee’s reputation. Ask which one your cafe is actually serving. About 40% of the time the barista will be surprised you asked. About 20% they will smile like you finally got it.

I sold my Rocket Appartamento in February. I wrote a post about it that was thoughtful and thorough and, in retrospect, wrong on one specific point. What I said: the espresso ritual was heavier than the day needed. What I discovered six months later: I missed it not for the ritual but for the drink. Espresso at a cafe is not a substitute for espresso at home, because at home you are drinking your own coffee, on your own timeline, in silence.

I bought a smaller machine — a used Gaggia Classic Pro, a fraction of the price of the Rocket — and I made peace with the fact that I would produce worse espresso than the professional shop three blocks away, but that this was not the point. The point was to have a good enough shot of my own beans, on my own kitchen counter, at 6:47 in the morning before the world starts.

The lesson generalises: sometimes you have to give something up completely to find out what you were actually getting from it. The Rocket was overkill for me. Zero espresso was too little. The Gaggia is exactly right. I still make one V60 per day too, and now the espresso feels like an occasion rather than an obligation. It took the whole detour to figure out.

Deadstock Coffee is in Old Town Portland, a couple of blocks from the Chinatown gate. The place is the size of a walk-in closet, decorated with sneakers, run by a former basketball player named Ian who started roasting because he wanted the coffee at his cafe to be as good as his sneaker collection. That sounds like a gimmick. It is not.

What Deadstock does that other Portland shops do not: they roast their beans in a way that respects the origin without being precious about it. The Kenyan single-origin tastes like a Kenyan, not like a bright citrus statement piece. The Colombian is chocolatey and grown-up. The staff will actually chat with you about basketball while pulling a shot. It is a specific vibe and it is fully theirs.

I go to Portland once or twice a year and I plan mornings around this place. That is embarrassing to say out loud about a coffee shop. It is true. If you find yourself in Portland with a free morning, walk down there, order the espresso and a drip, sit at the counter, do not open your laptop. Ian or whoever is on shift will notice if you are paying attention. That is how good coffee bars work when they are still good.

Most cold brew recipes online say 1:8 coffee to water, 12 hours. That produces something that tastes like coffee-flavoured pond. It is what almost every cafe serves. If you have written off cold brew based on this, I understand, but the actual ratio for a concentrate you would want to drink is much stronger than that.

My recipe: 1:5 by weight, medium-coarse grind, 18 hours in the fridge, filtered through paper. That produces a concentrate you dilute 1:1 or 1:2 with water or milk depending on how strong you want it. The 18 hours is important — short brew times leave you with muted, one-note coffee. The paper filter is important — a metal mesh alone leaves oils and silt that will taste heavy the next day.

Beans matter less than most people think for cold brew. A cheaper medium roast will actually give you a better result than a light roast — the cold water does not extract acidity efficiently, so bright beans end up flat. Save your good beans for hot brewing and pour-over. Cold brew is where you can get 90% of the pleasure for 50% of the bean cost, if you accept that it is a different drink from iced pour-over, not a lazy version of it.

I will not name it. Not because it is a secret — you can find it on a map — but because the last time I mentioned a small cafe by name in a blog post they got a rush of tourists for six weeks and the owner texted me sadly. So: Cobble Hill in Brooklyn, upstairs off a side street, no signage, six tables, one espresso machine that looks 40 years old and is not, a woman who runs the place and speaks four languages.

What made me stop working from cafes for a while is what she did when I opened my laptop the first time. She waited until I was settled in, brought me an espresso, smiled, and said “the wifi is off. On purpose. Come back with a book if you want to stay long.” No rudeness. Genuinely warm. But the message was clear: this is a cafe for drinking coffee.

I went back the next day with a paperback. I read for an hour. I ordered two coffees, tipped 30%, walked to the F train, went home. I noticed I felt better than I had after a whole morning of “working from a cafe” where I mostly stared at a laptop and drank one drink over three hours. There is a productivity thing here about attention that I could turn into an essay. But mostly there is just a cafe in Brooklyn that reminded me what cafes are for.

The espresso machine was a Rocket Appartamento. Good grinder, good technique, six years of steady practice. Every morning I would pull a shot, steam milk, sit with it. It was the anchor of my day, and I gave it up because I realised the anchor was heavier than the day needed.

Home espresso is a hobby that pretends to be a beverage. The workflow — grind, dose, tamp, extract, wipe, purge, steam, pour, clean — is 12 minutes minimum, plus daily maintenance, plus a weekly deeper clean. The output is one cup. Meanwhile a V60 with the same beans is 3 minutes and produces two cups that are, honestly, more interesting to drink.

What I miss is not the espresso. It is the ritual. Ritual is real. It is what pulled me out of bed on hard mornings. So I moved the ritual over to the pour-over: same time slot, same specific spot at the counter, same music, same mug. The espresso machine is at a friend’s house now, being enjoyed. My cabinet is cleaner. And I am drinking better coffee than I did, most days.

For about four years I was the person who orders coffee beans from a roaster in another country because someone on a coffee subreddit called them the best in Europe. La Cabra. Coffee Collective. Hydrangea. I had lists. I paid international shipping. I would wait three weeks for a bag of Colombian light roast and then finish it in eight days.

What ended the chase was not disappointment. It was that a small roaster opened fifteen minutes from my apartment, and their coffee was 92% as good, at half the price, with zero shipping, brewed the same day it was roasted. That last part matters more than most articles about coffee will tell you. Beans peak somewhere around 4 to 14 days after roast. By the time your international package arrives, half your window is gone.

I still order from the famous places once a year, at Christmas, as a treat. But my default has shifted. When someone asks for coffee bean recommendations now, I do not tell them a shop. I tell them to find the roaster within walking distance, buy from them for a month, and see how they feel. The best beans in the world roasted two weeks ago will be beaten by decent beans roasted last Tuesday, almost every time.

I get a specific question a lot: I do not like coffee that tastes like fruit or lemon, but I also do not want the burnt Starbucks thing, is there something in between? Yes. The category you want is called “natural process Colombian” or “natural process Brazilian.” The words to look for on the bag are natural, honey, or anaerobic.

The reason those beans taste like chocolate cake and not lemon is the processing. When coffee cherries are dried with the fruit still on the bean (natural process), the bean absorbs sugars and takes on notes that people describe with words like cocoa, caramel, brown sugar, and sometimes red wine. When cherries are washed clean before drying, you get the bright acidic notes people either love or find alarming.

Try a medium-roast natural process Colombian, brewed as a pour-over with a 1:16 ratio, and if it still tastes bitter to you it is not the bean, it is the water or the grind. Try again. Coffee that is genuinely bitter is coffee that was extracted too hard. Coffee that is sour is coffee that was under-extracted. Neither is inevitable. And the chocolate-cake thing is not a metaphor — done right, that is what the cup actually tastes like.
